Raised by local farmers, the chickens we serve freely explore fresh expanses of grass, consuming bugs and vegetation, fertilizing soil along the way. In line with more traditional approaches to animal husbandry, they are part of an ecosystem - additive, not destructive. This environment places minimal stress on the birds, which we believe is not only the right way to do things, it is also what results in the most flavorful meat. We’d call that a win-win.
